Guest guest Posted June 10, 2002 Report Share Posted June 10, 2002 * Exported from MasterCook * Peach Pie Recipe By : The McDougall Program, John and Mary McDougall, page 215 Serving Size : 8 Preparation Time :0:00 Categories : Fruits Pies And Pastry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ***FILLING*** 4 cups sliced fresh peaches 1/3 cup no-sugar apricot preserves 2 teaspoons lemon juice 1/8 teaspoon nutmeg 3 tablespoons whole wheat flour ***TOPPING*** 1 tablespoon pure maple syrup 1/2 teaspoon vanilla extract 1/4 cup quick-cooking oatmeal 1 tablespoon cornmeal SERVINGS: 8. PREPARATION TIME: 30 minutes. COOKING TIME: 45 minutes. Preheat the oven to 375ø. Place the sliced peaches in a 9-inch pie plate. Stir the preserves, lemon juice, and nutmeg together and spoon over the peaches. Sprinkle with flour and toss gently. Bake for 30 minutes. Meanwhile, make the topping. Combine the maple syrup and vanilla, pour over the oats and cornmeal, and mix well. Reduce the oven to 350ø and remove the peach filling. Crumble the topping mixture over the filling and return the pie to the oven for 15 minutes.
