Guest guest Posted June 10, 2002 Report Share Posted June 10, 2002 * Exported from MasterCook * Brown's Whole Wheat Waffles Recipe By : The McDougall Program, John and Mary McDougall, page 223 Serving Size : 8 Preparation Time :0:00 Categories : Breads, Quick Breakfast Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups whole wheat pastry flour 3 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt -- (optional) 1 teaspoon active dry yeast 1/4 cup water 1 teaspoon honey 1/2 cup cooked oat bran* 1 cup low fat soy milk 1 teaspoon lemon juice MAKES 8 WAFFLES. PREPARATION TIME: 15 MINUTES. COOKING TIME: 7 MINUTES EACH WAFFLE Serve with pure maple syrup, unsweetened applesauce and cinnamon, or no-sugar, pure-fruit jam. Combine the first four ingredients and set aside. Combine the yeast, water, honey, and cooked oat bran and let rest a few minutes. Then add the soy milk and lemon juice, mix well, and combine with the dry ingredients. Pour into a hot waffle iron and cook for 7 minutes. * To make 1/2 cup cooked oat bran, cook 1/4 cup uncooked oat bran in 3/4 cup water for 2 minutes.
