Oatmeal Muffins

Amount Measure Ingredient -- Preparation Method

1 cup uncooked quick-cooking oatmeal

1 cup apple juice

1 cup whole wheat four

3 teaspoons baking powder

1/8 teaspoon salt -- up to 1/4 (optional)

1 teaspoon cinnamon

1 teaspoon Egg Replacer

well mixed with 2 tablespoons water

and beaten until frothy

2 tablespoons honey

2 tablespoons apple or orange juice

 

MAKES 10 MUFFINS. PREPARATION TIME: 15 MINUTES. COOKING TIME: 15 MINUTES

 

Preheat the oven to 400ø. Combine the oatmeal and apple juice in a large

mixing bowl and let stand for ten minutes. Sift the flour, baking powder,

salt, and cinnamon together in a separate bowl. After the oatmeal and

apple juice have stood 10 minutes, add the Egg Replacer, honey, and orange

or apple juice and combine the wet and dry mixtures. Mix until just

moistened. Fill nonstick muffin cups with the batter and bake for 15

minutes, until golden brown on top.

 

VARIATIONS: Add 1/3 cup chopped nuts, waterchestnuts, or raisins to the dry

ingredients. Substitute 1 tablespoon molasses for 1 tablespoon of the

honey. Add 1/4 teaspoon of ginger to the dry ingredients. If your muffins

stick, you may need to lightly oil the muffin cups before using.
