Guacamole Ole!

3 ripe avocados

2 garlic cloves

crushed with garlic press

1 small red onion -- chopped

1 small ripe tomato -- chopped

2/3 cup loosely packed fresh cilantro leaves -- chopped

1/4 cup fresh lime juice

(from about 2 limes)

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1/4 teaspoon crushed red pepper

 

PREP 15 minutes. MAKES about 2 1/2 cups

 

Whether you have an authentic Mexican molcajete, a mortar and pestle, or

merely a bowl and fork, you can make guacamole tableside after guests

arrive, the way it's done in many fashionable Mexican restaurants.

 

Cut each avocado lengthwise in half; twist to separate halves. With spoon,

scoop avocado pulp into medium bowl; coarsely mash with fork. Gently stir

in garlic and remaining ingredients until mixed. Spoon guacamole into

serving bowl. Cover surface with plastic wrap to prevent discoloration;

refrigerate if not serving right away.

 

Each tablespoon: About 25 calories, 0 g protein, 1 g carbohydrate, 2 g

total fat (0 g saturated), 1 g fiber, 0 mg cholesterol, 30 mg sodium.
