Multicolored Slaw

2/3 cup red wine vinegar

1/4 cup olive oil

2 tablespoons sugar

2 teaspoons salt

1/2 teaspoon celery seeds

1/4 teaspoon ground black pepper

32 ounces shredded cabbage mix for coleslaw

10 ounces shredded red cabbage

 

PREP 10 minutes plus chilling. MAKES about 12 cups or 12 accompaniment

servings

 

We used a bagged coleslaw mix (containing shredded green cabbage and

carrots) and bagged shredded red cabbage to make this colorful slaw that

takes just minutes to whip up.

 

1. In large bowl, with fork, mix vinegar, oil, sugar, salt, celery seeds,

and pepper until blended. Add cabbage mix and red cabbage; toss well to

coat with dressing.

 

2. Cover and refrigerate coleslaw at least 1 hour or up to 1 day to allow

flavors to blend.

 

Each serving: About 80 calories, 1 g protein, 9 g carbohydrate, 5 g total

fat (1 g saturated), 2 g fiber, 0 mg cholesterol, 415 mg sodium.
