NOTES : Vegetarian jelled desserts don't always work because the jelling agent adds its own slightly odd flavor and it is difficult to get the right texture. However, this jelled compote is something else altogether -- luscious cherries in a soft jelled sauce flavored with brandy. Serve with a dollop of cream or ice cream, depending on your inclination. Incidentally, if you are wondering how a jelled dessert can be quick, make this recipe and you'll see -- agar-agar sets rapidly, thickening even as the mixture cools; and this is good to eat when warm and semi-set.
