Jelled Black Cherry Compote

Amount Measure Ingredient -- Preparation Method

22 ounces pitted black cherries in light syrup

(a 1-pound 6-ounce jar)

3 tablespoons sugar

1 tablespoon agar-agar flakes

2 tablespoons brandy

 

Carefully pour (tip) the cherries and their syrup into a saucepan. Add the sugar

and bring to a boil. Sprinkle the agar-agar flakes over the top and stir in;

boil for a further 4 to 5 minutes, then remove from the heat and stir in the

brandy.

 

Pour into four bowls or a large serving dish. It will thicken and become softly

jelled as it cools. Serve warm, or chill for up to 24 hours.

NOTES : Vegetarian jelled desserts don't always work because the jelling agent

adds its own slightly odd flavor and it is difficult to get the right texture.

However, this jelled compote is something else altogether -- luscious cherries

in a soft jelled sauce flavored with brandy. Serve with a dollop of cream or ice

cream, depending on your inclination. Incidentally, if you are wondering how a

jelled dessert can be quick, make this recipe and you'll see -- agar-agar sets

rapidly, thickening even as the mixture cools; and this is good to eat when warm

and semi-set.
