Grilled Portabello Quesadillas

1/4 cup olive oil

2 medium tomatoes -- seeded and diced

1 teaspoon garlic -- minced

4 large portabello mushroom caps

3 cups fresh spinach leaves -- stemmed

8 10 inch flour tortillas

1 1/3 cups pepper jack cheese -- shredded

 

Preheat grill on medium.

 

1.Combine oil and garlic in small bowl.

 

2.Brush caps with garlic oil. Spoon remaining garlic oil over mushroom gills.

 

3.Grill mushrooms, gill-sides up, 4-6 min; slice in 1/4-inch strips and season

with salt.

 

4.Place 4 tortillas on lightly oiled grill rack. Top with spinach, portabellos,

cheese, tomatoes and 4 remaining tortillas. Grill 1-2 min until lightly toasted.

With a wide spatula, carefully flip and toast other side 1 min. Cut each

quesadilla into quarters. Serve with your favorite salsa or guacamole.
