Curry Pasta Salad

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

8 ounces Rossi Pasta Curry Linguini

1 large Red bell pepper

1/2 cup Sliced celery

1 bunch Scallions -- chopped

3 1/2 ounces diced pimientos -- (or small jar)

1/4 tablespoon Fresh parsley -- minced

DRESSING:

1/2 cup Fat-free sour cream

2 tablespoons Olive oil

2 tablespoons Balsamic vinegar

1 tablespoon Soy sauce (optional)

Fresh ground pepper -- to taste

 

Cook pasta according to package directions. Drain and rinse with cold water.

Combine all ingredients, mixing thoroughly. Refrigerate overnight to allow

flavors to blend. If salad begins to dry add additional olive oil or sour cream.
