Guest guest Posted June 14, 2002 Report Share Posted June 14, 2002 * Exported from MasterCook * Rossi Pasta Tri Color Rotini Greek Salad Recipe By :Rossi Pasta, Marietta, OH Serving Size : 4 Preparation Time :0:00 Categories : Pasta Salad Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 oz Rossi Pasta Tri Color Rotini (or Spinach Basil Garlic Fettuccini or Black Olive Linguini) 1/4 Cup Extra virgin olive oil 1/3 Cup Rice wine vinegar Freshly ground black pepper -- to taste 1 Cucumber -- chopped 2 Medium tomatoes 6 ounces Sliced black olives -- (or 1 small can) 3/4 Cup Crumbled Feta cheese 3 Tablespoons Chopped Red onion 1 Fresh lemon or lime -- (juice) 1/2 Lb. Fresh spinach leaves -- or more 1. Place the Tri Color Rotini into boiling water for approximately 6 minutes; drain. 2. Combine the Olive Oil, Rice Wine Vinegar and Black Pepper by whisking for 30 seconds. 3. Add all the remaining ingredients and combine thoroughly. 4.
