Salad Mix With Spicy Peanut Dressing

Amount Measure Ingredient -- Preparation Method

***DRESSING***

2 tablespoons peanut butter

1 tablespoon chili paste

1 teaspoon brown rice vinegar

2 tablespoons tamari

2 1/2 tablespoons maple syrup

1 1/2 tablespoons lime juice

1/2 cup water

1 pinch sea salt

***SALAD***

6 ounces large bagged Mixed Greens -- (about)

1 medium yellow pepper -- (about 6 oz.)

seeded and cut into julienne slices

1 large carrot -- (about 6 oz.),

peeled and cut into julienne slices

1/2 cup peanuts -- roasted and chopped

1/2 cup edamame -- steamed and shelled

 

Yield: 3-4 servings

 

A medley of wonderful greens, seasoned with a mildly spicy dressing makes a

great side to dinner or nice light lunch. Created by Adam Tyner, a student

at the Natural Gourmet Cookery School.

 

Procedure: In a blender, combine all dressing ingredients. Blend 30-40

seconds until you have a uniform mixture. Set aside. Wash and spin greens.

 

Toss greens with cut vegetables. Toss salad with dressing, garnish with

peanuts and Edamame.

 

Wine Recommendation: Organic Natural Red
