Add the onion and garlic, cook, stirring occasionally, until aromatic and tender, about 3 minutes. Remove from the heat; stir in the parsley, basil, oregano, coriander, pepper, and cumin. Process the garbanzo beans and lemon juice in a food processor until the mixture is smooth. Add the bean mixture, sesame seeds, and salt to the skillet; stir evenly until combined. Taste and adjust the seasoning. Let cool. Variation White Bean Hummus: Substitute olive oil for the canola oil and one 15-ounce can white beans for the garbanzos. The flavour actually improves if hummus is made in advance, so plan ahead a day or two. Advance preparation: Hummus will keep for up to 5 days in a covered container in the refrigerator.
