Waldorf Salad

Amount Measure Ingredient -- Preparation Method

5 cups unpeeled apples -- diced

1 cup diced celery

1/2 cup chopped walnuts -- roasted

1/2 cup raisins

1/2 teaspoon lemon juice

***DRESSING***

1 1/2 cups pineapple juice

2 tablespoons cornstarch

 

SERVINGS: 6. PREPARATION TIME: 15 MINUTES (PLUS 2 HOURS TO CHILL

DRESSING). COOKING TIME: 5 MINUTES

 

To make the dressing, combine the pineapple juice and cornstarch in a

saucepan and mix well to dissolve. Bring the mixture to a boil over

medium-high heat and continue to boil for 1 minute or until thickened and

clear, stirring occasionally. Chill for 2 hours. Combine the salad

ingredients, pour the chilled dressing over the salad, toss thoroughly, and

let stand a few minutes before serving.
