Chinese Bean Thread Salad

8 ounces dry bean thread noodles

2 quarts boiling water

1/3 cup rice vinegar

3 tablespoons low-sodium soy sauce

1/2 cup sliced scallions

1/3 cup chopped fresh cilantro or parsley

1 tablespoon grated fresh ginger root -- up to 2

2 cloves garlic -- minced, up to 4

1 small unpeeled cucumber -- seeded

and cut into thin 3-inch slivers

 

SERVINGS: 6. PREPARATION TIME: 20 MINUTES (PLUS OPTIONAL 2-HOUR CHILLING

TIME). COOKING TIME: NONE

 

This is a popular dish at buffets in Hawaii, where bean thread noodles and

rice vinegar can easily be found in any supermarket. Here, they are

available in Oriental markets in major cities, or you may find them in your

natural food store.

 

Place the noodles in a large bowl, cover with the boiling water, stir, and

let stand for 15 to 20 minutes, until the noodles are softened. Drain and

cut into 6- to 8-inch lengths. Mix together the vinegar, soy sauce,

scallions, cilantro, ginger root, and garlic and pour over the bean

threads. Add the cucumber. Toss gently to mix. Serve immediately, or

cover and chill for 1 to 2 hours before serving.
