Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons extra-virgin olive oil 2 large garlic clove -- finely chopped 1 1/2 cups cooked chickpeas OR 1 15-ounce can chickpeas -- rinsed and drained 1 cup dry white wine 2 teaspoons fresh thyme leaves -- up to 3 OR 1 teaspoon dried 1 pound fresh plum tomatoes -- seeded and chopped 8 ounces fresh spinach -- stemmed cut crosswise into 1/2-inch-wide strips 1 pinch sugar Salt and freshly ground black pepper -- to taste 12 ounces vermicelli or capellini or spaghettini MAKES 4 TO 6 MAIN-COURSE OR 6 PASTA-COURSE SERVINGS This version of the whimsical French palourdes en nids, or " clams in nests, " is equally delicious prepared with Swiss chard or dandelion greens. The barely cooked sauce can be spooned over other pasta, rice, couscous, polenta, or steamed vegetables. In a large nonstick skillet, heat the oil over medium heat. Add the garlic and cook, stirring, for 2 minutes. Add the chickpeas and toss to coat with the garlic and oil. Add the wine and thyme. Bring to a boil over high heat. Add the tomatoes, spinach, sugar, salt, and pepper. Toss well to thoroughly combine and remove the skillet from the heat. Set aside until the tomatoes are just warm to the touch, about 5 minutes. Meanwhile, in a large stockpot, cook the pasta in boiling salted water according to package directions until al dente; drain well. Arrange equal amounts of the pasta in small circular piles resembling birds' nests in the bottoms of pasta or soup bowls. Divide the chickpea and tomato mixture evenly among the bowls. Pour the remaining liquids in the skillet evenly over all and serve at once.
