Cashew Nut Kibbeh

1 cup fine bulgur

1 cup raw cashew nuts

3 cups chopped onion -- divided

2 tablespoons flour

1 1/2 teaspoons salt -- divided

3/4 teaspoon pepper

1/4 teaspoon allspice

1/4 teaspoon cumin

1/4 teaspoon cinnamon

1/8 teaspoon cayenne

8 tablespoons olive oil -- divided

3 garlic cloves -- crushed

 

1. Soak bulgur in warm water for 10 minutes; place in strainer and press out

water. Set aside.

 

2. Place in the bowl of a food processor cashews, 1 cup onion, flour, 1 tsp

salt, 1/2 tsp pepper, all the allspice, cumin, cinnamon, cayenne; 2 tbs oil and

bulgur; process into a coarse paste and set aside.

 

3. Heat 4 tbs oil in a frying pan and stir fry remaining onion and the garlic

over medium heat until they begin to brown. Stir in remaining salt and pepper;

then set aside.

 

4. Divided food processor mixture into two equal portions. Spread on portion

evenly in a 7x11 greased pan. Spread frying pan contents over top, then spread

second portion of mixture evenly over top of onions. Cut into 2 inch squares,

then sprinkle with remaining olive oil.

 

5. Bake in an oven preheated to 350F for 40 minutes. Serve hot or cold.
