Grilled California Pizzas

Amount Measure Ingredient -- Preparation Method

Flour -- for dusting

1 pound frozen pizza dough -- thawed

cut and shaped into 4 rounds

2 tablespoons olive oil

8 teaspoons bottled pesto sauce

1/2 cup bottled pizza sauce

2 cups shredded part-skim mozzarella cheese

4 ounces goat cheese log

cut in small pieces

16 oil-packed sun-dried tomato halves -- cut in thin

strips

1/4 cup grated Parmesan cheese

1/4 cup basil leaves -- leaves torn

 

1. Heat outdoor grill to medium-high. On floured surface, with floured

hands, flatten and stretch each dough round into irregular 6-inch round,

keeping edges slightly thicker than centers. Lightly brush tops with half

the oil. Grill rounds, oiled sides down, 3 minutes, until slightly puffy

and golden. Lightly brush tops with remaining oil. Turn crusts over;

grill 2 minutes, until second side is almost dry and almost set. Remove

crusts to work surface.

 

2. Quickly spread each crust, starting 1/2 inch from edge, with 2

teaspoons pesto and 2 tablespoons pizza sauce. Scatter mozzarella, goat

cheese, tomato strips and Parmesan over tops. Return pizzas to grill;

cover grill. Grill 2 to 3 minutes, until cheese is melted and crust

bottoms are crisp. Serve, topped with basil.

 

Makes 4 pizzas. Per pizza: 724 calories, 34 g protein, 66 g carbohydrate,

35 g fat, 4 g fiber, 63 mg cholesterol, 1,006 mg sodium.
