Grilled Fruit Kabobs

***FRUIT***

1/2 small ripe sweet pineapple -- rind removed

cored and cut in 8 chunks

1 ripe mango -- pitted

peeled and cut in 8 chunks

2 ripe pitted nectarines

cut in quarters

2 ripe plums -- pitted

cut in quarters

***MARINADE***

2 teaspoons grated orange zest

1/2 cup fresh orange juice

2 tablespoons sugar and honey

1 teaspoon vanilla extract

Vegetable oil -- for brushing grill

 

1. FRUIT: Soak 8 (10-in.) bamboo skewers in cold water 30 minutes;

drain. Thread skewers with fruit, using 4 pieces of same fruit on each skewer.

 

2. MARINADE: In small bowl, whisk together marinade ingredients. Pour

into shallow baking dish; add skewers. Marinate at room temperature while

preparing outdoor grill, turning skewers a few times.

 

3. With oil, brush grill rack. Grill skewers 5 to 7 minutes, turning,

until lightly charred. Remove fruit from skewers to marinade in

dish. Serve fruit with marinade, and whipped cream or ice cream, if desired.

 

Makes 4 servings. Per serving: 198 calories, 2 g protein, 47 g

carbohydrate, 2 g fat, 3 g fiber, 0 cholesterol, 3 mg sodium.
