Guest guest Posted June 21, 2002 Report Share Posted June 21, 2002 found this recipe on the " low-fat " page at primo (canada). low fat means low-cholesterol. this one looks like it would be crunchy * Exported from MasterCook * Curried Wild Rice, Orzo and Lentil Salad Recipe By :Primo Family Favourites Serving Size : 6 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- SALAD: 1 cup wild rice -- rinsed and drained 1 cup Orzo 19 ounces canned Lentils -- rinsed 2 celery stalks -- sliced 1/3 cup currants 1/2 cup almonds -- toasted, coarsely chopped DRESSING: 2 tablespoons white wine vinegar 2 tablespoons apple cider vinegar 1 tablespoon curry powder 2 teaspoons granulated sugar 1/2 teaspoon salt 1/4 teaspoon turmeric 1/4 teaspoon ground coriander 1/4 teaspoon ground cumin 1 pinch cayenne 1/4 cup vegetable oil (or to taste) 1. In a large saucepan, bring 6 cups water to a boil. Stir in wild rice and return to a boil. Reduce heat, cover and cook 40-45 minutes, or until tender but firm. Rinse lightly and drain. 2. Meanwhile, in pot of boiling, salted water, cook orzo 10 minutes, or until tender but firm. Rinse lightly and drain. 3. In large bowl, combine rice, orzo, lentils, celery and currants; set aside. 4. In a separate bowl, whisk together white wine and apple cider vinegars, curry powder, sugar, salt, turmeric, coriander, cumin and cayenne. Gradually whisk in oil. 5. Pour dressing over salad and toss lightly. Stir in almonds and serve.
