Guest guest Posted June 22, 2002 Report Share Posted June 22, 2002 * Exported from MasterCook * Basic Grilled Tofu Recipe By :The Vegetarian Grill, Andrea Chesman Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds firm or extra firm tofu 1 tablespoon soy sauce 1 tablespoon toasted sesame oil or peanut oil Wrap the tofu in a clean cotton kitchen towel. Place a heavy weight on top (such as a cutting board weighted with a heavy juice can). Set aside for at least 30 minutes to allow the excess water to drain from the tofu. Prepare a medium-hot fire in the grill with a lightly oiled vegetable grill rack in place. Slice each block of tofu into 1/2-inch thick slices. Combine the soy sauce and oil and brush on the tofu. Grill the tofu until browned and a slight crust forms, about 5 minutes per side. Serve hot. VARIATIONS: Basic Grill Marinated Tofu: Replace the soy sauce and oil and 1/2 cup Chinese Soy-Black Bean Marinade and Dressing (page 280) or Spicy Chinese Marinade and Dressing (page 280). Pour over the sliced tofu and let sit for about 30 minutes to allow the marinade to be absorbed. Then grill as above. Teriyaki Tofu: Replace the soy sauce and oil with 1/2 cup Teriyaki Marinade and Dipping Sauce (page 277). Brush onto the sliced tofu, then grill as above. Additional marinade can be served as a dipping sauce at the table.
