Rice With Fruit & Nuts

1 tablespoon stick butter or margarine

1 cup chopped celery

4 scallions -- chopped,

white and green parts separated

1/2 teaspoon dried thyme

1/4 teaspoon salt and pepper

1 1/3 cups uncooked Texmati & wild rice blend

2 1/2 cups apple juice

1 cup chopped dried mixed fruit

(from a 7-oz bag)

1/2 cup chopped walnuts

 

LOW FAT. SERVES 5, PREP: 5 min, COOK: About 22 min, PER SERVING: 924

 

We used a precooked rice blend to cut cooking time. Cooking times vary, so

follow the label directions on the brand you buy.

 

1. Melt butter in a large nonstick skillet over medium heat. Add celery,

white part of scallions, thyme, salt and pepper. Saute 5 minutes or until

celery is soft. Add rice blend; stir to mix.

 

2. Stir in apple juice and dried fruit. Bring to a boil, reduce heat to a

gentle simmer, cover and cook 15 minutes or until liquid is absorbed and

rice is tender. Remove from heat; stir in nuts and scallion greens.

 

Per serving: 400 cal, 7 g pro, 75 g car, 4 g fiber, 10 g fat (1 g saturated

fat), 6 mg chol, 170 mg sod
