" I've always made meringue cookies for Passover since they don't require flour, " she says. " These 'forgotten' cookies [so called because they are put into a gradually cooling oven and 'forgotten' while they bake] are made by most people with peppermint, chocolate, or walnuts but I created this special variation for my grandma since lemon is her favorite flavor. They are easy to make, extremely low in fat and calories, and the lemon gives them some extra zip! " Enjoy these cookies with a clear conscience! They contain no fat, no cholesterol, and very little sodium. Best of all, they are truly low cal. 1. Preheat oven to 400F. Line two baking sheets with baking parchment and set aside. 2. Beat egg whites and salt in small bowl at high electric mixer speed until frothy. With mixer still at high speed, add sugar gradually, and continue beating until meringue peaks stiffly--about 4 minutes. Beat in vanilla, then by hand fold in lemon zest. 3. Drop meringues from rounded teaspoon onto prepared baking sheets, spacing 2 inches apart. Set in oven, immediately turn oven off, and let cookies remain in the oven for 2 hours (you can even leave them in overnight). 4. Peel meringues off parchment and store in airtight container.
