Guest guest Posted June 27, 2002 Report Share Posted June 27, 2002 * Exported from MasterCook * Grandmother Salvucci's Lentil Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1 cup chopped onions 1 tablespoon minced garlic 2 cups green or brown lentils -- rinsed 8 cups water or stock 1 cup diced potatoes 1 cup chopped tomatoes 1 tablespoon fresh thyme -- or 1 teaspoon dried 1 cup fresh spinach -- roughly chopped salt and fresly ground black pepper -- to taste shaved Parmesan cheese -- garnish Serves 6 to 8 Just a Taste wine and tapas bar in Ithaca, N.Y., is blessed with the cooking of chef David Salvucci. Once, after a day of nasty winter adventures in Boston, he returned home to find this comforting and delicious soup waiting for him courtesy of his grandmother. He's never forgotten it. In a soup pot, heat the oil over medium heat. When hot, add the onions and garlic and saute until the onions are translucent. Stir in the lentils and the water and bring to a boil. Lower the heat and simmer gently 30 minutes. Stir in the diced potatoes and simmer 10 minutes. Stir in the tomatoes and thyme and simmer 5 minutes. Stir in the spinach and simmer 1 minute. Season with salt and pepper. Serve topped with the Parmesan cheese.
