Blueberry Muffins

2 1/4 cups all-purpose flour -- divided

1/2 cup sugar

1 tablespoon baking powder

1/8 teaspoon salt

3/4 cup 1% fat milk

1/4 cup liquefied butter buds mix

1 large egg

1 1/2 cups fresh or frozen (thawed) unsweetened

blueberries

 

Preheat the oven to 400F. Spray a 12-cup muffin pan with nonstick cooking spray

or line with paper muffin cups.

 

In a large bowl, combine 2 cups flour, sugar, baking powder, and salt. Combine

the milk, Butter Buds, and egg, stir into the dry ingredients until moistened.

Rinse and drain the blueberries; toss with the remaining 1/4 cup flour. Gently

fold into the batter. Spoon equal amounts of batter into the pre pared muffin

cups.

 

Bake 20 to 25 minutes, or until golden brown and a toothpick inserted in the

center comes out clean. Remove from the pan and cool on a wire rack.
