Penne with Broccoli and Garlic

8 ounces uncooked penne or ziti macaroni

1 tablespoon olive oil

2 heads fresh broccoli -- trimmed and cut into bite-size pieces

(about 1 1/2 pounds)

1 tablespoon minced fresh garlic

1/2 cup dry white wine

1/4 cup reduced-sodium vegetable broth

2 tablespoons Butter Buds sprinkles

2 teaspoons salt-free garlic-and-herb seasoning blend

1/2 teaspoon dried thyme leaves -- crumbled

1/8 teaspoon salt

freshly ground black pepper -- to taste

fart-free grated Parmesan Italian topping -- optional

 

Cook the penne or ziti macaroni according to package directions but without

salt. In a large nonstick skillet over medium-high heat, heat the oil. When hot,

add the broccoli, garlic, and bacon. Cook, stirring constantly, for 5 minutes.

Add the wine, broth, Butter Buds, and seasonings to the skillet, bring to a

boil. Reduce the heat, cover, and simmer 5 to 7 minutes, or until the broccoli

is crisp-tender. Drain the pasta and stir into the broccoli mixture. Sprinkle

with Parmesan topping, if desired.

 

Tip: Broccoli-along with brussels sprouts, cabbage, cauliflower, kale, and

mustard greens-is a cruciferous vegetable. Cruciferous vegetables may be

protective against certain cancers.
