Guest guest Posted June 26, 2002 Report Share Posted June 26, 2002 * Exported from MasterCook * Marinated Oven Dried Tomatoes Recipe By :Paulette Mitchell 2000 Serving Size : 6 Preparation Time :0:00 Categories : Condiments Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup extra-virgin olive oil 4 garlic cloves -- minced 2 teaspoons cracked black pepper 1/2 teaspoon salt 2 pounds ripe plum tomatoes -- halved lengthwise, seeded (about 8 to 12 tomatoes) ITALIAN MARINADE: 1/4 cup extra-virgin olive oil 1/4 cup White Wine vinegar 1 tablespoon minced shallot 1 teaspoon minced fresh flat-leaf parsley 1 teaspoon minced fresh oregano 1/8 teaspoon dry mustard 1 Pinch red pepper flakes -- or, to taste 1 Dash ground White pepper -- or to taste Fresh basil or oregano sprigs -- for garnish Preheat the oven to 175F. Cover a large baking sheet with aluminum foil. Stir the olive oil, garlic pepper, and salt together in a medium bowl. Add the tomatoes to the olive oil mixture and toss. Use a slotted spoon to transfer the tomatoes, cut-Sides up, onto the baking sheet. Bake in the oven for 8 hours or overnight. The tomatoes should be shriveled, but still retain some moisture and softness TO MAKE THE MARINADE: While the tomatoes are in the oven, whisk all the marinade ingredients together in a medium bowl. Refrigerate in a covered container. When the tomatoes are done, whisk the marina Add the tomatoes and toss. (If you prefer, first halve the tomatoes again lengthwise or cut them into smaller pieces.) MARINADE VARIATIONS Substitute Lemon Vinaigrette or Balsamic Marinade for the Italian Marinade.
