Guest guest Posted June 28, 2002 Report Share Posted June 28, 2002 * Exported from MasterCook * Egg and Radish Tramezzini Recipe By :Paulette Mitchell Serving Size : 2 Preparation Time :0:00 Categories : New Import Sandwiches Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 slices white sandwich bread -- crusts removed Garlic Mayonnaise -- as desired 2 hard-cooked eggs -- 1/4-inch slices Salt and freshly ground pepper -- to taste 2 large radishes -- 1/8-inch slices Snipped fresh chives Thin strips green onion tops -- see tips Fresh watercress sprigs -- (thick stems removed) Spread one side of each bread slice with the mayonnaise. Top 2 bread slices with a layer of half of the egg slices; lightly sprinkle with salt and pepper. Top each bread slice with half the radish slices and chives, green onion, and watercress, if using. Top with the remaining bread slices. Cut each sandwich in half diagonally once or twice. VARIATION: * Substitute cucumber slices for the radish slices. TIPS: * Paulette's preference is to use sea salt. It has a fuller flavor, so less is usually needed. You can purchase sea salt in many supermarkets as well as in natural foods stores. Fine sea salt can be used just like ordinary table salt. Coarse sea salt can be finely ground in a salt mill for use in recipes or at the table. (Make sure that the salt mill has a stainless steel or other noncorrosive mechanism.) * Green onions, also called scallions or spring onions, are delicately flavored members of the onion family. The size varies from very slender to large and thick; as a rule, the more slender the bottoms, the sweeter the flavor. The leaves should be bright green and firm; the white bulbs should be firm and unblemished. Both parts can be used in recipes calling for green onions. Wrap green onions in a plastic bag and store them for up to week in the vegetable crisper section of the refrigerator.
