Roasted Red Pepper Avocado Clubs with White Bean Hummus

Amount Measure Ingredient -- Preparation Method

8 slices white bread (about 1/4-inch-thick) -- preferably

butter-crust

FILLING:

1/3 cup White Bean hummus

1 Roasted Red Bell Pepper -- well drained, cut

into one-inch-wide strips

1/2 avocado -- peeled, pitted, cut

into 1/4-inch-thick slices

1/2 tomato -- cut

into 1/4-inch-thick slices

2 tender lettuce leaves

such as red leaf lettuce

 

Lightly toast the bread in a toaster.

 

Spread 1 heaping tablespoon of hummus on one side of each of the bread

slices. Top each of 2 slices of the bread, hummus-side up, with half of the

roasted red bell pepper strips, then top each with a slice of bread,

hummus-side up. Top each with a layer of half of the avocado slices. Top

each with another slice of bread, hummus-side up. Top each with a layer of

tomato slices, then a lettuce leaf. Top each with a slice of bread,

hummus-side down. Press gently and halve each sandwich diagonally. Fasten

each half with a decorative sandwich pick.

 

VARIATION: If you are unable to find thinly sliced bread, use 3 slices of

regular sandwich bread for each sandwich, Layer from the bottom up as

follows: bread, hummus, red bell pepper, bread, hummus, tomato, avocado,

lettuce, hummus, bread.

 

TIPS:

* Because cool temperatures reduce the flavor of tomatoes and can make

their texture mealy, do not store tomatoes in the refrigerator. Store them

on the counter at room temperature, where they will become redder, softer,

juicier, and tastier as they ripen; once they are fully ripened, use within

2 days.

 

* To prevent tearing and bruising, use a knife with a serrated

stainless-steel blade for slicing and cutting tomatoes.

this sandwich, but your favorite white loaf is just fine. Select an

unsliced loaf of bread and ask the bakery to custom-cut it into 1/4 inch
