Guest guest Posted July 1, 2002 Report Share Posted July 1, 2002 * Exported from MasterCook * Polenta with Chevre and Roasted Vegetables Recipe By :Best Diabetes Cookbook, edited by Katherine Younker Serving Size : 4 Preparation Time :0:00 Categories : Diabetic Grains Meatless Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- POLENTA: 3 cups vegetable stock 1 cup cornmeal VEGETABLES: 1 medium red bell pepper -- cut into quarters 1 medium yellow pepper -- cut into quarters 1 medium red onion -- sliced 16 ounces small zucchini (8-oz each) -- halved lengthwise 1 tablespoon olive oil 1 small garlic bulb (head) -- top 1/2-inch cutoff 1 tablespoon balsamic vinegar 2 ounces goat cheese (chevre) 1. Preheat oven to 425F. Spray an 8-inch square baking dish with vegetable spray. Line a large baking sheet lined with foil. 2. In a deep saucepan over medium-high heat, bring stock to a boil. Reduce heat to low; gradually whisk in cornmeal. Cook, stirring, for 5 minutes. Pour into baking dish, smoothing top; chill. 3. In a bowl combine red pepper, yellow pepper, onion, zucchini and olive oil; transfer to prepared baking sheet. Wrap garlic loosely in foil; add to baking sheet. Roast vegetables in preheated oven, turning occasionally, for 45 minutes or until tender. Squeeze garlic out of skins; chop remaining vegetables. Transfer all to a bowl. Sprinkle with balsamic vinegar; toss to coat well. 4. Turn polenta onto cutting board; cut into 4 squares. In a large nonstick frying pan sprayed with vegetable spray, cook polenta over medium-high heat for 2 minutes or until golden. Turn; cook for 1 minute. Spoon polenta onto serving plates. Top with vegetable mixture; sprinkle with goat cheese. They are marketing a " cows milk " " chevre " - so check the label. Chevre is 15% milk fat. So it's a lower-fat cheese with lots of flavor Nutr.
