Guest guest Posted July 1, 2002 Report Share Posted July 1, 2002 * Exported from MasterCook * Grilled Balsamic Vegetables over Penne Recipe By :Best Diabetes Cookbook, edited by Katherine Younker Serving Size : 8 Preparation Time :0:00 Categories : Diabetic Meatless Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium red onion -- cut in half horizontally 1 medium zucchini -- cut lengthwise into 4 strips 3 medium colorful bell peppers -- (green, red and/or yellow) 2 medium tomatoes -- cut in half horizontally 1 pound penne DRESSING: 3 tablespoons lemon juice 3 tablespoons balsamic vinegar 1/4 cup olive oil 2 teaspoons crushed garlic 1. Preheat oven to broil or start barbecue. Place all vegetables on grill or barbecue. Grill onion for 25 minutes, turning until charred. Grill zucchini for 15 minutes until charred, turning as necessary. Grill sweet peppers for 15 minutes until charred. Grill tomatoes for 12 to 15 minutes until charred, rotating as necessary. Let vegetables cool for 10 minutes. 2. Remove top, skin and seeds of sweet peppers. Chop all vegetables into medium diced pieces, keeping juices. Set aside. 3. Meanwhile, cook pasta in boiling water according to package instructions or until firm to the bite. Drain and place in serving bowl. Add vegetables. 4. Make the dressing: Combine lemon juice, vinegar, oil and garlic. Pour over pasta, and toss. MAKE AHEAD * Grill vegetables early in day.
