Guest guest Posted July 1, 2002 Report Share Posted July 1, 2002 fruit, beans, vegetables and spice ;-) * Exported from MasterCook * Cuban Spicy Bean Salad with Oranges and Cilantro Recipe By :Betty Crocker Serving Size : 4 Preparation Time :0:10 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 oranges -- peeled and sliced or 11 ounces canned mandarin orange segments in light syrup, drained 2 cups shredded carrots (3 medium) 2/3 cup chopped fresh cilantro 1/2 cup balsamic or red wine vinegar 2 tablespoons sugar 2 teaspoons chopped fresh or canned jalapeno chilies 30 ounces canned black beans -- rinsed 4 cups bite-size pieces curly endive or lettuce Mix all ingredients except endive in nonmetal bowl. Cover and let stand 30 minutes. Divide endive among 4 salad plates. Top with bean mixture.
