Heat the oil in a small skillet over medium heat. Add the peppers and onions and cook, stirring, for 5 minutes or until the onion is softened. Add the tomatoes and cook 2 minutes longer, stirring occasionally. Transfer the mixture to a bowl and mix in the spinach, vinegar, tofu, soy cheddar, soy milk, and salt & pepper to taste, stirring well to combine.
