tonights dinner was this Greek-style salad. We cooked flageolets for this. They

are fairly quick to prepare. Flageolets need seasonings in the broth.

Feta and Flageolet Spinach Salad

Amount Measure Ingredient -- Preparation Method

4 ounces baby spinach leaves

10 ounces ripe tomatoes -- cut into bite-sized pieces

2 1/4 cups cooked flageolet beans (or small cannelini) -- rinsed

1/4 cup diced red onion

2 tablespoons reduced fat feta cheese -- crumbled

FOR THE DRESSING:

1 pinch kosher salt

1 garlic clove -- minced

coarsely ground black pepper

1 tablespoon fresh lemon juice

1 teaspoon honey -- or to taste

1 tablespoon extra virgin olive oil

pinch dried thyme

ACCOMPANIMENT:

2 crusty rolls -- warmed

 

Make the dressing: Tip the ingredients into the salad bowl and whisk vigorously

to blend. Adjust salt, pepper and sweetness to taste. Add the beans to the bowl

and toss. Add the remaining salad ingredients. Toss to combine. Allow to stand

10 to 20 minutes to develop flavor. Toss again. Serve with the warmed bread.

 

Per Serving: Calories 249 (22% from fat); 6g Total Fat; 11g Fiber (5 WW POINTS)

 

 

Variation: Use any citrus; sweeten with maple syrup.
