Fried Rice with Tofu and Scallions

1/4 cup reduced-sodium soy sauce

1 1/2 tablespoons dry sherry

1 tablespoon water

1/2 teaspoon sesame oil

1/2 teaspoon garlic powder

1/2 teaspoon ground ginger

3 drops hot sauce (optional) -- to taste

1 large bunch green onions (about 7 medium)

(Or 1/2 cup white and 1 cup of greens)

2 1/2 teaspoons vegetable oil

1 pound firm or medium tofu (light) -- in 1/2-inch cubes

drained well between layers of towels

1 cup sliced mushrooms

4 cups cooked brown rice -- cold

 

In a small bowl or custard cup, combine soy sauce, sherry, water, sesame oil,

garlic powder, ginger, and hot sauce. Mix well and set aside.

 

Slice the white ends of the green onions into 1/2-inch pieces. Thinly slice the

green parts. (You should have about 1/2 cup of the white parts and 1 cup of the

green parts.)

 

Heat vegetable oil in a large nonstick skillet over medium-high heat. Add the

white parts of the green onions, along with the tofu and mushrooms. Sprinkle

with 1 tablespoon of the soy mixture. Cook, stirring constantly, 5 minutes, or

until tofu is lightly browned. Stir gently, with a tossing motion, being careful

not to break up the tofu.

 

Add rice, green parts of the green onions, and remaining soy mixture. Continue

to cook, stirring constantly, until mixture is thoroughly combined and rice is

hot and sizzling.

 

QUICK TIP: You can make the rice and slice the green onions and mushrooms up to

a day ahead and keep them in the refrigerator until needed.

NOTES : A favorite in Chinese restaurants, fried rice is often served as an

entree. I've added tofu and lots of green onions (scallions), adding protein and

flavor to this easy dinner-in-a-skillet. Start with soup, add a side dish of

steamed green beans, and that's all you need.
