Guest guest Posted July 8, 2002 Report Share Posted July 8, 2002 xpost * Exported from MasterCook * Savory Spiced Split Peas Recipe By :Vegetarian Gourmet Easy Low Fat Favorites Serving Size : 4 Preparation Time :0:00 Categories : Beans New Import {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup split peas -- uncooked 2 1/2 cups vegetable broth or prepared bouillon 3/4 teaspoon ground cumin 1/2 teaspoon ground ginger 1/2 teaspoon ground coriander 1/4 teaspoon ground cinnamon 1/16 teaspoon ground cloves 1/16 teaspoon cayenne pepper 1/2 cup hot water Salt -- to taste In a medium saucepan, combine all ingredients, except hot water and salt. Bring to a boil over medium heat, then cover, reduce heat to medium-low, and simmer 30 minutes. Stir in hot water, cover, and continue to cook 10 minutes more. Add salt, to taste. Spoon over rice or any other cooked grain. SERVE-AGAIN HINT: For a tasty soup, stir vegetable broth into the leftovers until a desired consistency is reached, then heat and serve.
