Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 cup split peas -- uncooked

2 1/2 cups vegetable broth or prepared bouillon

3/4 teaspoon ground cumin

1/2 teaspoon ground ginger

1/2 teaspoon ground coriander

1/4 teaspoon ground cinnamon

1/16 teaspoon ground cloves

1/16 teaspoon cayenne pepper

1/2 cup hot water

Salt -- to taste

In a medium saucepan, combine all ingredients, except hot water and salt. Bring

to a boil over medium heat, then cover, reduce heat to medium-low, and simmer 30

minutes.

Stir in hot water, cover, and continue to cook 10 minutes more. Add salt, to

taste. Spoon over rice or any other cooked grain.

SERVE-AGAIN HINT: For a tasty soup, stir vegetable broth into the leftovers

until a desired consistency is reached, then heat and serve.

NOTES : If you love split peas but thought they were just for soup, you'll love

this thick stew-like mix that can be served over any cooked grain. I especially

like it over a mildly spiced dish, such as the Spiced Raisin Rice.
