Guest guest Posted July 9, 2002 Report Share Posted July 9, 2002 Kind of high in fat, but (naturally) they look good- * Exported from MasterCook * Chickpea Munchies Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup dried chickpeas -- (2 1/2 cups cooked) 1 tablespoon olive oil 1 clove garlic -- minced 2 teaspoons curry powder 1/2 teaspoon salt -- (1/2 to 3/4) freshly ground black pepper -- to taste What food these morsels be. They vary from crunchy inside and out to crunchy on the outside and soft on the inside. Theyre great for appetizers with drinks and also make tasty, nutritious snacks. (Photo on page 129.) Sort through, rinse, soak, and cook the chickpeas by your preferred method (see Chapter 7). Drain and place on paper towels to dry. Preheat the oven to 400F. In a large frying pan, heat the oil over medium-low heat. When hot, add the garlic and curry powder. Saute, stirring occasionally, until the garlic just begins to turn golden. Add the chickpeas and stir to coat with the garlic and curry powder. Add the salt and pepper. Stir to combine and turn out the chickpeas into a large, shallow baking pan. Bake 25-35 minutes, or until crunchy. Serve warm. Yields 2 1/2 cups Note: You can freeze cooked Chickpea Munchies and then reheat them at 400F for 15-20 minutes.
