Guest guest Posted July 10, 2002 Report Share Posted July 10, 2002 xpost * Exported from MasterCook * Herbed Orzo with Basil Recipe By :Bobbie Hinman Serving Size : 6 Preparation Time :0:00 Categories : 2002-07-10 Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons vegetable oil 1 cup finely chopped onion 2 cloves garlic -- crushed 2 cups vegetable broth -- (or bouillon) 2 tablespoons reduced-sodium soy sauce 1 teaspoon dried basil 1/16 teaspoon pepper 1 cup orzo -- uncooked Heat oil in a medium saucepan over medium heat. Add onion and garlic. Cook, stirring frequently, until onion is tender, about 4 minutes. Add small amounts of water as necessary, about a tablespoon at a time, to prevent sticking. Add remaining ingredients, except orzo. Bring mixture to a boil, then stir in orzo. Cover, reduce heat to medium-low, and cook 15 minutes, until the liquid has been absorbed. Fluff with a fork before serving. Serve-again hint: Heat the leftovers in dear vegetable broth, and you have a delectable noodle soup.
