Guest guest Posted July 10, 2002 Report Share Posted July 10, 2002 xpost * Exported from MasterCook * Lentil Pitas with Greek Olives and Roasted Peppers Recipe By :Bobbie Hinman Serving Size : 6 Preparation Time :0:00 Categories : 2002-07-10 Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups water 1 cup lentils -- uncooked 8 Greek pitted black olives -- cut vertically into thin strips 1/2 cup green onions with tops -- thinly sliced 1/3 cup roasted red bell peppers -- cut into thin strips 2 teaspoons dried marjoram 3/4 teaspoon ground coriander 1/2 teaspoon dill weed 1/4 teaspoon salt 1/4 teaspoon pepper 2 1/2 tablespoons olive oil 1 tablespoon lemon juice 6 ounces whole-wheat pita breads (6-inch) -- cut in half crosswise Bring water to a boil in a medium saucepan. Add lentils, cover, reduce heat to medium-low, and simmer 30 minutes, until lentils are tender (don't let them get mushy). While lentils are cooking, in a medium bowl, combine olives, onions, roasted peppers, marjoram, coriander, dill weed, salt, and pepper. Mix well. Drain lentils and add to olive mixture, mixing well. In a small bowl, whisk oil and lemon juice together. Pour over lentils and mix well. Divide warm lentil mixture and spoon into pitas. Serve-a gain hint: Serve the leftovers cold atop a bed of greens or scoop it with (baked) tortilla chips or celery sticks. Just chop a few ingredients while the lentils cook, and you have the fixings for a delicious, warm sandwich reminiscent of a Greek feast.
