eggplant stew thing request?

So I got this very simple recipe for an eggplant stew a while back, and I'm

pretty sure it came from this list. I accidentally threw it away on a camping

trip last summer, and now I really want to make it, but I can't find it.

 

I think it was called an Eggplant Imnazela, or something like that, it was

eggplant and chickpeas, and a can of tomatos... and I added fresh parsley,

and oregano, but that wasn't in the recipe.

Does anybody have this one? I really appreciate the help.

You can go to , log in and you'll see your groups, or

just click on Veg-Recipes

 

There should be a text edit field where you can enter any search criterion.

After you type it in, click on the Search Archive button. I just executed a

search using the word " Imnazela " and came up with one message: yours. There

are a quite a few more that have the word eggplant in it. You may have

discovered that reciped in another group. Perform that search in your other

groups.

 

By the way, now that you have us hungry for that recipe, please let us know

I found it! (and guess where it was, Saved on my own computer in my recipe

folder. Who'd a thought to look there! :P I need to get better organized

obviously.) So here's the recipe for any of you who get eggplant cravings like

I do :) I added dried oregano and fresh parsley to this and I think that really

perked it up.

 

 

 

Stewed Eggplant / Imnazelle

Serving Size : 4 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

1 large eggplant

1 large onion

1 clove garlic

1/4 cup olive oil

28 ounces canned tomatoes

1 1/2 cups water

salt and black pepper

15 ounces canned chickpeas

 

Peel and cut the eggplant into large cubes. Chop the onion and garlic and

saute in a pan with the oil. Place the eggplant, onions and garlic in a large

kettle. Add tomatoes, water, salt and pepper; bring to a boil and reduce heat

to medium. Cover and cook for 30 minutes. Add chickpeas the last 5 minutes

before serving.

 

VARIATION: Squash, potatoes or both can be peeled, cubed and added with

the tomatoes.

Steph's note: Add Fresh Parsley and dried oregano.
