Guest guest Posted July 14, 2002 Report Share Posted July 14, 2002 * Exported from MasterCook * Thai Vegetarian Green Curry Recipe By :Thai Kitchen Serving Size : 5 Preparation Time :0:00 Categories : Curry Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup firm tofu -- cut into 1/2 in squares 1 tablespoon green curry paste -- (1 to 2) 1 1/2 cups coconut milk 1 green bell pepper -- cut into thin strips 1/4 cup green peas -- fresh or frozen 1/2 cup bamboo shoots 1 medium carrot -- cut diagonally 3 small green squash [opo] -- sliced (3 to 4) 2 tablespoons dark sweet soy sauce 1 cup fresh bean sprouts 2 1/2 cups cooked jasmine rice Marinate tofu in sweet soy sauce for 20 minutes, drain. Heat 1 tablespoon vegetable oil in a medium saucepan, fry curry paste for 1 minute. Add 1/4 cup of coconut milk, tofu and all the vegetables except the peas & bean sprouts. Simmer for 5 mins. Add remaining coconut milk, bring to boil, reduce heat and simmer until vegetables are nearly tender. Add peas and bean shoots. Cook for 5 to 10 mins. Serve with jasmine rice. Garnish with chopped shallots. TIPS - OPO SQUASH: Thin, pale yellow-green squash with smooth skin. Similar to large zucchini except for color. Use like squash. Eat flesh only. [aka: Cucuzza Squash is a pale green squash of Italian origin will grow up to 3 feet long. When harvested in shorter lengths, it can look like a bowling pin in shape and may be referred to as a bottle gourd or Opo in Asian markets. It has a very mild flavor, similar to zucchini. Usage: Peel and slice squash. If seeds are tender, prepare as you would zucchini, if not, remove seeds before cooking.
