Miso Soup with Azuki Beans

1 cup dries azuki beans -- (2 cups cooked)

2 pieces kombu -- (about 6 inches long)

8 cups water

1/2 cup red miso

2 carrots -- sliced thin on the diagonal

2 celery stalks -- sliced thin on the diagonal

1 cup cooked white or brown rice

1 cake soft tofu -- cubed

soy sauce -- to taste

4 scallions -- white and green parts, sliced thin

 

Serves 4 to 6

 

This is a richly flavored, dense soup-a meal in a bowl. A flavorful azuki bean

base is combined with thinly sliced vegetables, tofu, and rice. You can also add

extra vegetables, such as slivered fresh spinach, snow peas, or julienned

daikon. Serve with a light cucumber salad for a real palate pleaser.

 

Sort through, rinse, soak, and cook the beans until quite mushy by your

preferred method (see Chapter 7). Pur6e in a food processor with a bit of their

cooking stock. Set aside.

 

Combine the kombu and water in a large soup pot and simmer over low heat 20

minutes. Remove the kornbu and discard it. Add the beans, miso, bonito, carrots,

and celery and continue cooking on low heat (taking care not to boil the soup)

until the vegetables are tender.

 

Add the rice and tofu. Check the soup for saltiness, then add the soy sauce to

taste. Heat through. Top with sliced scallions just before serving.

 

Note: Kombu, a member of the kelp family of seaweeds, adds flavor, and many

people find that it makes beans easier to digest. It can be found in Asian and

whole-food markets.
