How bout grilled pumpkin wedges or on a bed of mixed salad greens? * Exported from MasterCook * Lentils Manzanillo Recipe By :Lentil Cookbook by Lee Mac Morris 1974 Serving Size : 6 Preparation Time :0:00 Categories : Beans Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- LENTILS: 1 cup dried red lentils 1 quart water 1 teaspoon salt 1 small bay leaf SAUTE: 3 tablespoons butter 1/4 cup chopped green bell pepper 1/2 cup chopped onion salt 1/4 teaspoon freshly ground pepper PLANTAINS: 2 tablespoons butter 1 ounce ripe plantain (1 large) -- thickly sliced Pick over and rinse lentils in cold water. Cook, covered, in water with 1 tsp salt and bay leaf. When tender, drain thoroughly. Meanwhile melt butter and saute the onion and green pepper until soft, stirring often. Add salt and pepper. Meanwhile in another skillet melt the butter for the plantains; saute the ripe plantain slices until nicely browned.
