okay! based on other recipes in this book and other recipes in my other books,

here's the revision -- untested. If have one from veg times with red lentils

that i

will post next.

Coconut Curried Lentils

 

Recipe By :Lentil Cookbook by Lee Mac Morris 1974

Amount Measure Ingredient -- Preparation Method

1 onion -- sliced

1 clove garlic -- sliced

1 tomato -- peeled and sliced

Salt -- to taste

1 tablespoon butter or oil

2 cups cooked lentils

1 cup coconut milk

2 tablespoons curry powder -- or to taste

 

In heavy saucepan fry onion, garlic, tomato, curry powder, and salt, to taste,

in butter or oil until onion is golden. Add lentils and coconut milk. Bring to a

boil, reduce heat and simmer 20 minutes, uncovered, stirring occasionally.

Mixture when cooked should be very thick; reduce liquid over high heat if

necessary.

 

EDITOR'S NOTES: the recipe failed to list curry powder as an ingredient and it

stated 1 cup lentils, cooked. These two ingredients were edited to be consistent

with the other recipes in this book: i.e., cook 1 cup lentils; add 1 tbs curry

powder per cup cooked lentils. - PatH
