If have one from veg times with red lentils that i will post next. * Exported from MasterCook * Coconut Curried Lentils Recipe By :Lentil Cookbook by Lee Mac Morris 1974 Serving Size : 4 Preparation Time :0:00 Categories : Legumes Side Dishes Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- sliced 1 clove garlic -- sliced 1 tomato -- peeled and sliced Salt -- to taste 1 tablespoon butter or oil 2 cups cooked lentils 1 cup coconut milk 2 tablespoons curry powder -- or to taste In heavy saucepan fry onion, garlic, tomato, curry powder, and salt, to taste, in butter or oil until onion is golden. Add lentils and coconut milk. Bring to a boil, reduce heat and simmer 20 minutes, uncovered, stirring occasionally. Mixture when cooked should be very thick; reduce liquid over high heat if necessary. EDITOR'S NOTES: the recipe failed to list curry powder as an ingredient and it stated 1 cup lentils, cooked.
