Butterscotch Chocolate Chip Bread Pudding

2 tablespoons unsalted butter -- melted

2 cups 3/4-inch cubes French bread -- (about 1/2 loaf)

1 large egg

1/2 teaspoon vanilla

1/4 teaspoon salt

1/3 cup firmly packed brown sugar -- plus 1 tablespoon

1 1/4 cups milk

2 tablespoons semisweet chocolate chips

vanilla ice cream -- accompaniment

 

Preheat oven to 350 F. and butter a loaf pan, 9 by 5 by 3 inches.

 

In a bowl drizzle butter on bread. In another bowl whisk together egg, vanilla,

salt, and 1/3 cup brown sugar. In a small heavy saucepan heat milk just to a

boil and add to egg mixture in a stream, whisking. Pour custard over bread,

stirring to combine well, and let stand 5 minutes. Stir in chocolate chips and

turn mixture into loaf pan. Sprinkle pudding with remaining tablespoon brown

sugar and bake in middle of oven 25 minutes, or until a knife inserted in center

comes out clean.

 

Serve pudding warm with ice cream. Serves 2. May be doubled.
