Penne with Gorgonzola

Salt

1 pound penne

1 pound mixed red and yellow bell peppers

1 garlic clove

5 ounces Gorgonzola

1 tablespoon pine nuts

1 tablespoon olive oil

1/2 cup heavy cream

Black pepper

 

* For penne, bring plenty of water to boil. Add salt and penne and boil until al

dente. Reserve 1/4 cup cooking water.

 

* Halve, clean, and finely dice peppers. Peel garlic. Dice Gorgonzola. Toast

pine nuts in dry skillet over low heat until golden.

 

* Heat oil in pot and saute peppers over medium heat about 2 minutes.

 

* Add cream, Gorgonzola, and reserved penne cooking water and heat. Stir sauce

over low heat until cheese is melted. Press garlic into sauce. Season with salt

and pepper.

 

* Mix penne with sauce. Serve on warmed plates sprinkled with pine nuts.
