Guest guest Posted July 20, 2002 Report Share Posted July 20, 2002 Tofu and Spinach Stuffed Mushrooms Recipe By : Serving Size : 3 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 oz frozen or fresh spinach 1 lb tofu 15 large fresh mushrooms 1 tablespoon butter or margarine 1 teaspoon garlic powder to taste salt and pepper mozzarella cheese 2 tablespoons tamari soy sauce Steam spinach until tender. As spinach is cooking, drain tofu and then chop into very fine pieces. Wash fresh mushrooms and remove stems, being careful not to harm mushrooms. Set mushrooms aside and chop stems very finely. When spinach is tender, cool and chop finely. Melt butter in a medium saucepan. Add tofu, mushroom stems, spinach, garlic powder, salt, and pepper, and cook for 10 mins. As it is cooking grate enough mozzarella cheese to go over the top of the mushrooms. Preheat oven to 350F. Prepare a deep baking dish by putting tamari and enough leftover spinach juice to cover the bottom of the dish/pan. Stuff each mushroom fully with the stuffing and place side by side in the dish. Top with grated mozzarella cheese, then bake for 20 mins. or until cheese is melted and golden brown.
