I roasted the peppers earlier in the week and put them in a jar, covered it with olive oil and put it in the fridge. lemon linguine 1 small onion 2-3 garlic cloves 1 teaspoons olive oil 2 red peppers, roasted, peeled and seeded 1/2 teaspoon dried oregano 1/4 cup olive oil one bunch spinach, cleaned feta cheese Cook linguine in boiling water with salt until il-dente. Save a cup of pasta water. Saute onions, garlic in olive oil and the dried oregano. Place the onions, garlic, oregano, 1/4 cup olive oil and red peppers in a blender...blend until pured. Place the spinach in a large bowl, place the hot pasta on top of spinach and add the sauce and mix. Add the pasta water if it's too dry. Sprinkle with feta cheese. Salt and pepper to taste.
