Pea Pod Lettuce Soup

Amount Measure Ingredient -- Preparation Method

1 pound pea pods (snap peas) -- pods only

3 cups torn lettuce leaves

1 medium carrot -- cut into 4 pieces

3 cups water

3 bouillon cubes (chicken flavor) -- 1-tsp each

2 tablespoons butter or margarine

2 tablespoons flour

1/4 teaspoon dried thyme leaves

1/4 teaspoon salt

1/8 teaspoon pepper

1/2 cup milk -- (your choice)

 

1. SHELL: separate pods from peas; reserve peas for another use. Heat pods,

lettuce, onion, water, bouillon to boiling in 3-quart saucepan; reduce heat.

Cover and simmer until pods are tender, about 10 minutes.

 

2. Puree pod mixture in blender, small quantity at a time. Press puree through

fine sieve or cheesecloth to remove fibers.

 

3. Heat butter in saucepan until melted. Stir in flour, thyme, salt and pepper.

Cook over low heat, stirring constantly, until mixture is smooth and bubbly;

remove from heat. Stir in puree. Heat to boiling, stirring constantly. Boil and

stir 1 minutes. Stir in milk and heat 5 minutes. Serve warm. Soup can be

refrigerated and served cold.
