Grilled Marinated Tofu Steak on Stir Fry Vegetables

Amount Measure Ingredient -- Preparation Method

1 cup mirin (sweet rice wine)

1 cup sake

1/2 cup rice wine vinegar

1/2 cup tamari soy (or any low-sodium soy sauce)

2 lemons -- grated zest

2 limes -- grated zest

16 ounces light firm tofu -- brushed lightly with

Chinese chili garlic paste -- as needed

2 cups assorted vegetables for stir-fry

olive oil -- as needed

2 cups steamed rice (Japanese or jasmine preferred)

Sesame seeds (white and black)

Pea tendrils or greens -- for garnish

 

1. Combine mirin, sake, rice wine vinegar, soy, and citrus zest in a bowl. Cover

with plastic wrap, and store the citrus broth overnight in the refrigerator.

(The mixture can be kept for up to 3 weeks.)

 

2. Brush the tofu with chili garlic paste and a small amount of citrus broth.

Slice vertically into 8 portions and heat on a stove-top grill or in a saute pan

brushed with a small amount of olive oil. Set aside.

 

3. Stir-fry the vegetables briefly in a saute pan brushed with a small amount of

olive oil.

 

4. Remove the vegetables, add 1/4 cup of the citrus broth to the pan, and then

briefly deglaze the pan over high heat.

 

5. To serve, spoon a portion of vegetables onto each serving plate, mounding

slightly. Lean two slices of tofu against the vegetables. Drizzle 2 tablespoons

of the broth and a sprinkle of sesame seeds over each serving. Add rice and

garnish with pea tendrils or other greens
