Guest guest Posted July 24, 2002 Report Share Posted July 24, 2002 These muffins always disappear the same day I make them -- truly a family favorite. * Exported from MasterCook * Banana Muffins with Streusel Topping Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : baked breakfast brunch cake dessert favorite fruit make ahead nut snack vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups whole wheat flour 1 cup unbleached flour 1/4 cup chopped walnuts 2 teaspoons baking soda 1 teaspoon nutmeg 1/4 cup brown rice syrup 1/4 cup unsulphured molasses 1 cup mashed banana 2 teaspoons vegetable oil 1 teaspoon vanilla extract water Topping: 1 teaspoon cinnamon 1 tablespoon soy margarine 1/2 cup brown sugar -- or Sucanat 3/4 cup rolled oats Preheat oven to 375º F. Mix wet ingredients in a 2 cup measure, adding enough water to make two cups liquid. Mix dry ingredients together in a large bowl. Add wet ingredients to dry and mix just until moistened. Spoon mixture into non-stick or lightly greased muffin pan. Mix together topping ingredients and sprinkle on top. Bake until tops spring back, about 25 minutes.
