The Banana Bread of Kings

Amount Measure Ingredient -- Preparation Method

1 cup bran flakes cereal -- such as Total

1 cup (2 to 3) mashed ripe bananas

3 tablespoons applesauce -- replacing shortening

1/2 cup sugar

3/8 cup boiling water

1 1/2 cups all purpose flour -- sifted

2 teaspoons baking soda

1/2 teaspoon salt

 

Measure bran cereal, banana, applesauce and sugar in a large bowl. Add the

water and stir.

 

In another bowl, sift together flour, baking soda, and salt (or don't sift

it -- stirring it well with a fork works also). Add this to the banana

mixture, stirring only until combined.

 

Pour into bread pan and stick in the oven.

 

Bake at 350ºF for about 45 minutes.

1/2 Other Carbohydrates.

 

NOTES : 9-99: Tried this, using 40% Bran Flake Cereal and adding about 1/3

to 1/2 cup chopped walnuts. I fold most of the nuts into the batter, but

keep out a few to scatter over the top of the loaf before baking. Baked in

an 8½-x-4½-inch pan for slightly longer than the suggested 45 minutes. It

turned out perfectly and tasted great. The kids loved it.
